In this air fryer zucchini meatballs recipe, you can enjoy the delicious flavour of mini zucchini fritters with an amazing crunchy texture but at the same time, be completely flourless.

I love these zucchini meatballs. I mean I REALLY LOVE these zucchini meatballs. They have a lovely crunchy flavour thanks to the fine gluten free oats, are loaded with lots of cheese and the zucchini gives them a lovely flavour.

I have always eatenzucchini fritterswith the plain flourbut it is really not that healthy and Ialways find that is gives me a big bloated feeling afterwards.

I have suffered with IBS a lotover the last few years as well as a gluten free intolerance and prefer to makezucchini meatballs instead.

Even better, if you cook zucchinimeatballs like this it is like eating popcorn chicken meatballs from KFC withthat lovely crunchy texture.

Our Air Fryer Zucchini Meatballs are healthy thanks to using oat flour in replacement for regular plain flour. As well as this my zucchini meatballs are loaded with lots of fresh zucchini, making them PERFECT for hidden veggies for your kids.

They are also good for the lowcarb diet and are perfect for vegetarians. I was a vegetarian for most of the90’s and love veggie loaded meatballs like this recipe.

Absolutely! Whenever I havezucchini that I need to use up, I make a load of zucchini meatballs and thenfreeze them for another time.

When making zucchini vegetarianmeatballs in the air fryer, everything is rather simple and not thatdifferent compared to making regular meaty meatballs.

You start by squeezing the excess liquid from your freshlygrated zucchini and then placing it in a bowl. All the other ingredients thatmake up your zucchini meatballs are added in and you form meatballs from youringredients.

After you have made your ingredients into zucchini meatballsyou cook them on a high heat in the air fryer.

The reason for the high heat is that it helps crisp up the meatballsas without the meat, they need an extra push in the right direction to get themnice and crispy for you.

You can then eat them straight away, fridge them for later,wait until they cool down and freeze them, or whatever you want.

  • Preheat your air fryer to 200c/400f.

  • Start by grating your zucchini and removing any excess water from it by squeezing it out with your hands into a bowl.

  • Place your squeezed-out zucchini and your beaten egg into a mixing bowl. Add in the rest of your ingredients except for the oats.

  • In your blender place your oats on the high setting and blend until they resemble fine breadcrumbs.

  • Place the oats into the bowl a little at a time as it will go thick rather quickly.

  • Mix together and create bite sized zucchini meatballs.

  • Place in the air fryer for 10 minutes on 200c/400f.

  • Serve.

Notes

I prefer to cook my air fryer zucchini meatballs in the air fryer grill pan. It is perfect for foods that are a bit sticky and makes cleaning your air fryer so much easier. Plus, people will think that your zucchini meatballs came straight from the BBQ.
