"While searching for an authentic Texas Style Chili, I discovered this recipe from http://recipes.suite101.com/article.cfm/cowboy_steak_chili. There are so many chili recipes with many variations for all types of taste buds, but this one really knocked my socks off. While the chili recipe above will stand up even if all you add is chili powder, this mix will give it more complex depth of flavor. The idea comes from Cowboy Steak, where the essential “Cowboy” element is ground coffee. Was this the result of a creative campfire cook. Or some happy chuck wagon mistake? You can also use this seasoning to make Cowboy Steak. If you do, it is traditional to add onion powder and garlic powder to the mix. You may want to mix up enough to use later as a dry rub for ribs or chops or even chicken. If you do, bloom the mixture just before using. The only change I made was to cook the chili for 8 hours on low in the crock pot before serving. I truly believe that one of the secrets to good chili is a looooooonnnnngggg cooking time.YEEHAA"

  1. We are avid campers and this chili recipe is now a staple of our camping trips. We make this in advance along with some jalapeño & cheese cornbread...BOOM! If you have access to Belching Beaver Peanut Butter Stout beer, I highly recommend using it in this recipe. I also substitute one can of kidney beans with black beans. Awesome!

  2. 5 stars for the phrase 'more beer' in the directions o/

  3. We really enjoyed this recipe. I had a lb. of round steak, a lb. of chorizo, and bacon on hand. The only changes made were: only 1 tsp cumin, because we don’t care for it much, 7 oz can green chili’s due to size I had, Belgian style ale, instant coffee granules. It had such a nice, rich flavor. It wasn’t too hot for my hubby, who sometimes accuses me of trying to kill him with hot peppers. I let it cook all afternoon, I think about 6 to 7 hrs. It was perfect. I’ll definitely make it again.

  4. Just won 1st Place at a neighborhood Chili Cookoff with this recipe. Followed the recipe exactly. The texture was great with the steak/bacon/chorizo. Added the optional can of corn and used "Newcastle Brown Ale" for the beer. This is a little labor intensive but well worth it. You will not be disappointed. Enjoy.....

  5. My husband was blown away with this chili - very fragrant, not complicated, and nutritional. Will save this recipe and make it again!

FAQs

Do you have to brown the meat for chili before putting in crock pot? ›

Do you have to brown the meat for slow cooker chili? Technically, no. The beef, bell pepper, onion, and garlic will all cook in the slow cooker, but browning the meat and sautéing the vegetables in a skillet before adding it to the slow cooker brings much more flavor to the chili. You'll be glad you did—promise!

How long to leave chili in crock pot on high? ›

Add remaining ingredients into the slow cooker: rinsed and drained beans, diced tomatoes with their juice, diced tomatoes and green chilis with juice and tomato sauce. Stir to combine and cook on high for 3-4 hours or on low for 6-8 hours. Season to taste if desired and serve warm.

Can you overcook chili in crock pot? ›

Can I overcook chili in a slow cooker? Yes, but it would take a while. I have cooked this chili for 9 hours on low and it was delicious but ever-so-slightly burnt on the top. The tomatoes contain sugar, which caramelizes in the slow cooker, and will eventually burn if it cookes for too long.

What happens if you don't brown meat before slow cooking? ›

While searing meat before slow cooking can enhance flavors by developing a caramelized crust, it's not strictly necessary. If you skip searing, the meat may lack some depth of flavor, but it will still cook and become tender in the slow cooker.

How long can you leave chili in a crockpot on low? ›

6–8 hours. If it is ground beef and beans, 6 hours is good. If it is regular meat then 8 will be more tender. Bad Chili can be left a long time.

Does chili taste better in the crockpot? ›

The flavor of the crockpot chili is rich and robust, the texture of the beef is so tender, and it turns out perfect every time! All it takes is a few minutes of prep work earlier in the day, and you're ready to enjoy a delicious bowl of chili for dinner or to serve to a crowd for your Super Bowl Party!

How do you keep chili from burning in a crock pot? ›

I always add a can of V8 Veggie Juice (not the tomato V8 juice), on top of the juices form the diced and stewed tomatoes. Another thing I suggest is stirring the chili every so often to make sure nothing sticks, but specifically to make sure there is enough liquid in the chili so that it doesn't get burned.

What liquid to add to chili? ›

Chili cooks low and slow, so you need enough liquid to tenderize the meat and keep everything from drying out. That liquid should also add flavor to the chili, so use chicken, beef, or vegetable stock, or beer.

How to make chili more flavorful? ›

If you want more of a smoky flavor, add cumin, Spanish paprika, ancho chili powder, or a combination. If you are looking for more heat, add cayenne, crushed red pepper, or Hungarian paprika. If it's too spicy add a little brown sugar and some sweet paprika.

Beans and non-vegetable fillers such as rice and pasta are not allowed." If that sounds a bit uptight, the ICS's Homestyle Chili competition defines chili as: "any kind of meat, or combination of meats, and/or vegetables cooked with beans, chili peppers, various spices, and other ingredients.

Is 4 hours on high the same as 8 hours on low in a slow cooker? ›

The difference between "High" and "Low" on slow cookers seems to differ with every brand and model. One thing that is consistent, though, is that food takes seven to eight hours to reach a simmer point (around 210°) on low; versus three to four hours on high.

Can I leave my crockpot on low all night? ›

A Case For Not Browning

You will also overcook your meat, which leads to tougher, pebblier end results. If you don't brown your meat, you'll end up with a rich, silky, tender texture. On the other hand, your flavor won't be as deep. And that's just the sad fact that we have to live with.

Do you have to brown meat before cooking chili? ›

Raw meat and pot of chili are two things that just don't belong together. If the recipe includes any type of ground meat, bacon, chorizo, or cubes of beef, it should always be browned first. Try this: The first order of business before adding anything else to the pot is to brown any meat in your recipe.

Can you put raw meat straight into a slow cooker? ›

Yes, you most certainly can cook raw meat in the slow cooker! You put it in “cold”, with whatever liquid your recipe calls for, turn it on either “low” or “high” depending on your recipe (I usually start it on “high” for a couple hours, then turn it to “low”), and in 6–7–8 hours, it's now COOKED meat!
